BROWN SUGAR OATMEAL PANCAKES
(SERVES 6)
3 CUPS ROLLED OATS
2 1/2 CUPS WHOLE BUTTERMILK (IF USING NON FAT OR MILK, USE ONLY 2 CUPS)
3 EGGS
2 TSP. VANILLA
¼ CUP LIGHT BROWN SUGAR
¼ CUP CANOLA OIL
1 CUP FLOUR
½ TSP. SALT
¼ TSP. NUTMEG
¼ TSP. CINNAMON
1 TSP. BAKING SODA
- STIR OATS AND BUTTERMILK TOGETHER IN LARGE MIXING BOWL. ALLOW TO SOAK FOR 20 MINUTES.
- BEAT THE EGGS WITH THE VANILLA, SUGAR, AND OIL.
- IN A SEPARATE BOWL MIX TOGETHER FLOUR, BAKING SODA, NUTMEG, CINNAMON AND SALT.
- MIX OATS, EGG MIXTURE AND FLOUR MIXTURE ALL TOGETHER.( Consistency should be that of a very thick milkshake. Adjust by adding either flour or buttermilk)
- HEAT GRIDDLE OVER MEDIUM LOW HEAT FOR 3-5 MINUTES . DROP ¼ CUP MIXTURE ONTO OILED OR BUTTERED SURFACE. ALLOW EDGES TO STIFFEN AND PANCAKE TO TURN GOLDEN BROWN, FLIP ONCE AND COOK OTHER SIDE UNTIL GOLDEN BROWN AS WELL. SERVE IMMEDIATELY.
