Vegan and Gluten-free Granola

Gluten Free and Vegan Granola homemade at our Virginia Bed and Breakfast

If there’s one thing we’re nuts about – it’s granola! There are so many recipes out there for you to try, and really what it comes down to is personal preference. Give this recipe a go, and you walnut regret it! Many guests have enjoyed our homemade granola over the years, so we think it’s time to share our recipe with you. If you are a vegan, or a regular ol’ maple syrup connoisseur from the North, you can tweek this recipe and replace honey for more syrup, stevia, or agave. Don’t worry – we use the real stuff! We thought it was raisin-able to keep the recipe fruit-free, but blueberries, craisins, or fresh sliced bananas or strawberries would be a great addition to enjoy with yogurt. We think that you will enjoy this Tabbs Creek granola specialty so much, you oat to share it with your neighbors!

Ingredients:

3 cups Regular Oats

½ cup Sunflower Seeds

2 Tablespoons Sesame Seeds

1 cup Walnuts, chopped

1 cup sliced almonds

2 Tablespoons maple syrup

¼ cup light brown sugar

2 Tablespoons Honey*

2 tsp vanilla extract

½ cup canola oil

*Can be substituted for maple syrup, agave, or stevia.

Instructions:

  1. Mix together oats, seeds and nuts in large mixing bowl. Heat oven to 325.
  2. In a small sauce pan mix together remaining ingredients. Stir well and over medium low heat, bring to a slight simmer, turn off heat, do not let boil.
  3. While hot, pour oil mixture from saucepan in oat mixture. Mix thoroughly with rubber spatula.
  4. Spread evenly on large greased baking pan. Place in oven for approximately 30 minutes (or until golden brown). Stir granola every 10 minutes
  5. Remove sheet pan from oven and allow to cool. Place in airtight container. Will stay fresh for up to 2 weeks – but homemade granola never lasts that long here!
